Method

Fish Bites Preparation

    Prepare the Fish

    Pat the fish fillets dry with paper towels and cut them into bite-sized pieces.

    Prepare the Breading

    In a bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Beat the Eggs

    In another bowl, beat the eggs until they are well combined.

    Coat the Fish

    Dip each piece of fish in the egg mixture first, then coat it in the flour mixture, ensuring that it is evenly covered.

    Fry the Fish

    In a deep frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded fish pieces and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Chimichurri Sauce Preparation

    Combine Ingredients

    In a bowl, mix together the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Stir until well combined.

    Let it Sit

    Allow the chimichurri to sit for at least 15 minutes to let the flavors meld.

Tostones Preparation

    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    In a frying pan, heat vegetable oil over medium heat. Fry the plantain slices for about 3-4 minutes on each side until they are lightly golden. Remove them from the oil and drain on paper towels.

    Smash the Plantains

    Using the bottom of a glass or a tostonera, gently smash each fried plantain slice to flatten it.

    Fry Again

    Return the smashed plantains to the hot oil and fry again for an additional 2-3 minutes until crispy. Remove from oil, sprinkle with salt, and drain on paper towels.
