Ceviche Preparation

Prepare the Fish
Start by cutting the fresh fish into small, bite-sized cubes.

Marinate the Fish
In a large bowl, combine the fish with fresh lime juice, making sure the fish is completely submerged. Cover and refrigerate for at least 30 minutes to allow the fish to 'cook' in the lime juice.

Combine Fish and Veggies
After 30 minutes, check the fish. It should be opaque and firm. Add the diced vegetables to the fish and lime juice mixture. Stir gently to combine.

Season the Ceviche
Season the ceviche with salt and black pepper to taste. Mix well and let it sit for an additional 10 minutes.

Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.

Fry the Plantains
In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the plantain slices in batches and fry for about 3-4 minutes until they are golden yellow.

Drain the Plantains
Remove the fried plantains from the oil and place them on a paper towel to drain excess oil. Allow them to cool for a couple of minutes.

Flatten the Plantains
Using a flat object (like a plate or a tostonera), flatten each fried plantain slice to about 1/2 inch thickness.

Fry the Tostones
Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes until they are crispy and golden brown. Remove and drain on paper towels.

Sprinkle the tostones with salt while they are still hot to enhance flavor.
