Method

Preparation

  1. 1

    Select and Peel the Plantains

Choose ripe plantains that are yellow with black spots for sweetness. Cut off the ends and make a slit along the length of each plantain. Peel the skin away carefully.

  2. 2

    Slice the Plantains

Cut each plantain diagonally into slices about 1 inch thick. This will help them fry evenly and create a larger surface area for caramelization.

Cooking

  1. 3

    Heat the Oil

In a large skillet or frying pan, heat the vegetable oil over medium heat. Make sure there is enough oil to cover the bottom of the pan generously.

  2. 4

    Fry the Plantains

Once the oil is hot, carefully add the plantain slices in batches. Fry them for about 3-4 minutes on each side, or until they are golden brown. Avoid overcrowding the pan.

  3. 5

    Drain and Season

Once the plantains are golden brown, remove them from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt while they are still hot.

Serving

  1. 6

    Garnish and Serve

Serve the maduros warm, optionally garnishing with sour cream or cheese and fresh cilantro for added flavor. Enjoy as a side dish or snack!
