Select and Peel the Plantains
Choose ripe plantains that are yellow with black spots for sweetness. Cut off the ends and make a slit along the length of each plantain. Peel the skin away carefully.

Slice the Plantains
Cut each plantain diagonally into slices about 1 inch thick. This will help them fry evenly and create a larger surface area for caramelization.

In a large skillet or frying pan, heat the vegetable oil over medium heat. Make sure there is enough oil to cover the bottom of the pan generously.
