    Prepare the Ingredients

    Begin by slicing the flank steak into thin strips against the grain. Next, slice the red onion into wedges and chop the tomatoes into bite-sized pieces. Peel and cut the russet potatoes into thick fries.

    Fry the Potatoes

    In a large pot, heat vegetable oil over medium-high heat. Add the cut potatoes and fry them until golden brown and crispy, about 5-7 minutes. Remove from the oil and drain on paper towels. Sprinkle with salt to taste.

Cooking

    Stir-fry the Beef

    In the same pot, add 2 tablespoons of vegetable oil and increase heat to high. Add the sliced flank steak and cook for about 3-4 minutes until browned. Remove the beef and set aside.

    Sauté Vegetables

    In the same pot, add the remaining 2 tablespoons of oil. Add the sliced red onion and minced garlic, sautéing for 2-3 minutes until the onion is translucent. Then, add the chopped tomatoes and cook for another 2 minutes.

    Combine and Season

    Return the beef to the pot and add the soy sauce, vinegar, ground cumin, black pepper, and salt to taste. Stir well and let it cook for an additional 2-3 minutes, allowing the flavors to meld.

Serving

    Plate the Dish

    Serve the beef stir-fry over a bed of crispy fries. Garnish with freshly chopped cilantro.
