Preparing the Yuca

    Peeling and Cutting

    Start by peeling the yuca to remove the tough brown skin. Cut the yuca into chunks, about 2-3 inches long.

    Boiling the Yuca

    Place the yuca chunks in a large pot and cover with water. Bring to a boil and cook for about 20-25 minutes or until tender. You should be able to easily pierce the yuca with a fork.

    Once cooked, drain the yuca and let it cool for a few minutes.

    Removing the Fibrous Core

    Cut the boiled yuca pieces in half lengthwise to expose the fibrous core. Remove the core from each piece.

Frying the Yuca

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add the yuca pieces to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

    Once fried, remove the yuca pieces with a slotted spoon and place them on paper towels to drain any excess oil. Sprinkle with salt, garlic powder, and black pepper while they are still hot.

    In a small bowl, combine mayonnaise, minced garlic, and lime juice. Stir well until the ingredients are fully mixed.
