Prepare the Potatoes
Wash and peel the Russet potatoes. Cut each potato into thin strips, about 1/4 inch wide. Rinse the cut fries under cold water to remove excess starch, then drain and pat them dry with a clean kitchen towel.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Fry the Potatoes
Carefully add a handful of the potato strips into the hot oil, being careful not to crowd the pan. Fry them in batches for about 5-7 minutes, or until they turn golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Season immediately with salt and black pepper to taste.
