Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, let it cool slightly and then fold the vinegar mixture into the rice. Allow it to cool to room temperature.

Make Shrimp Tempura
Prepare tempura batter as per package instructions. Heat oil in a deep pan. Dip shrimp into the batter and fry until golden brown and crispy. Remove and drain on paper towels.

Mix Ingredients
In a small bowl, combine mayonnaise and Sriracha sauce. Adjust spiciness to taste.
Assemble Dragon Roll

Lay Nori
Place a nori sheet shiny side down on a bamboo sushi mat.

Spread Sushi Rice
Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a small border at the top.

Roll the Sushi
Using the sushi mat, carefully roll the nori away from you, pressing firmly to shape the roll. Seal the edge with a bit of water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

Garnish
Drizzle spicy mayo over the top and sprinkle with tobiko and sesame seeds if desired.
