Preparation of Ingredients

Prepare the Longaniza
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the longaniza and cook for about 10-12 minutes, turning occasionally until browned and cooked through. Season with salt and black pepper to taste.

Cook the Salami
In the same skillet, add another tablespoon of olive oil if necessary, and add the sliced salami. Cook for 5-7 minutes until the salami is crispy and browned.

Prepare the Fried Cheese
Cut the queso frito into slices. Heat oil in a separate skillet over medium heat and fry the cheese slices for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

Prepare the Maduro
Peel the ripe plantain and slice it diagonally into 1-inch thick pieces. In the same skillet used for the salami, add a bit more oil if needed and fry the plantain slices for about 2-3 minutes on each side until golden and caramelized.
Assembling the Cibao Roll

Layer the Ingredients
On a large serving plate or board, layer the cooked longaniza, crispy salami, fried cheese, and fried maduro slices together.
