Prepare the Cauliflower
Wash and cut the cauliflower into bite-sized florets, ensuring they are all roughly the same size for even cooking.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the water until the mixture is smooth and free of lumps.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles and rises, the oil is hot enough.

Fry the Cauliflower
Dip each cauliflower floret into the batter, ensuring it's fully coated, then carefully drop it into the hot oil. Fry in batches for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the bites and drain them on paper towels.

In a small bowl, combine mayonnaise, chopped cilantro, sriracha sauce, lime juice, and salt. Mix well until all ingredients are thoroughly incorporated.
