Cauliflower Preparation

Prepare the Cauliflower
Remove the leaves from the cauliflower head and cut it into bite-sized florets. Rinse the florets under cold water and set aside.

Make the Tempura Batter
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the ice-cold water until the batter is smooth and slightly thickened.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Fry the Cauliflower
Dip each cauliflower floret into the tempura batter, allowing the excess to drip off. Carefully place the battered florets into the hot oil in batches. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Mix the Spicy Mayo
In a small bowl, combine mayonnaise, chopped cilantro, Sriracha sauce, and lime juice. Mix well until all ingredients are thoroughly blended. Adjust the Sriracha to taste for desired spiciness.
