Cook the Rice
If not using leftover rice, cook jasmine rice according to package instructions and allow it to cool completely.

Prepare the Protein (if using)
If adding chicken, pork, steak, or shrimp, dice the protein of choice into bite-sized pieces.

Sauté the Vegetables
In a large skillet or wok, heat sesame oil over medium heat. Add garlic and ginger, and sauté for 1-2 minutes until fragrant. Add diced carrots, bell pepper, and green onions, and stir-fry for another 3-4 minutes until vegetables are tender.

Stir in the Rice
Add the cooked jasmine rice to the skillet. Pour in soy sauce, and season with salt and black pepper. Stir everything together and cook for an additional 5 minutes, allowing the rice to slightly crisp at the bottom.

Plate the Dish
Spoon the arroz chaufas onto plates and top with a fried egg if desired. Serve hot and enjoy!
