Prepare the Chicken

Season the chicken thighs with salt and black pepper. Heat some oil in a pan and fry the chicken until golden brown and cooked through, about 6-8 minutes per side. Remove and let rest.

Cook the Pork

Cut the pork belly into bite-sized pieces. In the same pan, add more oil if necessary and fry the pork until crispy, about 10-12 minutes. Drain on paper towels.

Fry the Chorizo

Slice the chorizo into thick rounds and fry in the pan until browned and crispy, about 5-7 minutes. Drain on paper towels.

Grill the Skewers

Cook the mixed skewers on a grill or in a grill pan over medium heat until fully cooked, about 10-15 minutes, turning occasionally.

Prepare the Empanadas

If using frozen empanadas, bake or fry according to package instructions until golden brown.

Cook the Arepas

If using homemade arepas, prepare them by mixing the masa with water and salt, forming patties, and cooking them on a hot griddle until golden brown on both sides.

Fry the Tostones

Peel and slice the plantains into 1-inch thick pieces. Fry in hot oil until golden, then flatten with a tostonera or the bottom of a glass and fry again until crispy. Drain on paper towels.

Assemble the Platter

Arrange all cooked ingredients on a large platter. Serve with BBQ guava sauce on the side for dipping.
