Directions for Preparing El Ninja Roll
Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice, water, 1 tbsp rice vinegar, sugar, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it stand covered for another 10 minutes.
Fry the Sweet Plantain
Peel and slice the sweet plantain diagonally into 1/2 inch thick slices. Heat oil in a frying pan over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.
Prepare the Shrimp Tempura
Coat the shrimp in a tempura batter and fry them in hot oil until golden and crispy, about 3-4 minutes. Drain on paper towels.
Assemble the Roll
Lay a sheet of nori on a bamboo mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. In the center, place shrimp tempura, fried cheese, and sweet plantain slices. Roll tightly, using the mat to help. Seal the edge with a little water.
Slice the Roll
Using a sharp knife, slice the rolled sushi into 8 equal pieces. Wipe the knife with a damp cloth between cuts to keep the edges clean.
Serve
Arrange the sushi rolls on a plate. Drizzle with sweet chili sauce and top with a dollop of guacamole. Serve immediately.
