Prepare the Ingredients

Clean and prepare all seafood. Chop the onion, garlic, and roasted red peppers. Slice the chorizo into rounds.

Cook the Chorizo

In a large paella pan, heat olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Remove and set aside.

Sauté the Vegetables

In the same pan, add the chopped onion and garlic. Sauté until translucent, about 3-4 minutes.

Add Rice and Saffron

Stir in the rice and saffron, mixing well to coat the grains in oil. Toast for about 2 minutes.

Add Stock and Simmer

Pour in the stock and bring to a boil. Add the cooked chorizo back into the pan. Season with salt and black pepper.

Add Seafood

Reduce heat to low and arrange the lobster, shrimp, calamari, clams, mussels, and roasted peppers on top of the rice. Cover and cook for about 15-20 minutes, or until the seafood is cooked and the rice has absorbed the liquid.

Add Peas and Serve

In the last 5 minutes, sprinkle sweet peas over the paella. Remove from heat, let it rest for a few minutes, then serve directly from the pan.
