Pasta Cooking

    Boil Water

    In a large pot, bring water to a boil over high heat.

    Add Salt

    Once the water is boiling, add 1 tsp of salt.

    Cook Pasta

    Add the penne pasta to the boiling water and cook according to package instructions until al dente, about 10-12 minutes.

    Drain Pasta

    Once cooked, drain the pasta and set aside, reserving a cup of pasta water.

Sauce Preparation

    Heat Olive Oil

    In a large skillet over medium heat, add 2 tablespoons of olive oil.

    Sauté Garlic

    Add 3 minced cloves of garlic to the skillet and sauté for about 1 minute, or until fragrant.

    Add Tomatoes

    Add 300g of halved cherry tomatoes to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften.

    Season the Sauce

    Stir in 1 tsp of salt and 1 tsp of freshly ground black pepper. Mix well.

    Add Basil

    Add 1 cup of chopped fresh basil leaves to the skillet and stir to combine.

    Combine with Pasta

    Add the cooked penne pasta to the skillet along with some reserved pasta water as needed to create a light sauce. Toss to combine.

    Finish with Cheese

    Remove from heat and sprinkle 50g of grated Parmesan cheese over the pasta, stirring gently to combine.
