Mash the Potatoes
Once cooked, drain the potatoes and let them cool slightly. Peel the potatoes and mash them until smooth in a mixing bowl.

Shape the Gnocchi
On a floured surface, divide the dough into 4 sections. Roll each section into a long rope about 1-inch thick. Cut the ropes into 1-inch pieces and use a fork to create ridges on each piece.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking until they float to the top, about 2-3 minutes. Remove with a slotted spoon and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
