Mash the Potatoes
Once the potatoes are cool enough to handle, peel them and mash them in a large bowl until smooth and lump-free.

Shape the Gnocchi
Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Optionally, use a fork to create ridges on each piece.
Cooking the Gnocchi

Boil Water
Bring a large pot of salted water to a boil. Use about 2 tablespoons of salt.

Cook the Gnocchi
Add the gnocchi to the boiling water in batches. Cook until they float to the surface, about 2-3 minutes. Remove them with a slotted spoon and set aside.

Sauté the Gnocchi
In a large skillet, heat the olive oil over medium heat. Add the cooked gnocchi and sauté until golden and slightly crispy, about 5-7 minutes.

Remove from heat, toss with chopped fresh basil, and sprinkle with grated Parmesan cheese before serving.
