Make the Dough
In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, salt, and cinnamon. Mix well. Make a well in the center and add the egg, white wine (or vinegar), and melted butter. Stir until the mixture begins to come together.

Knead the Dough
Transfer the mixture onto a lightly floured surface and knead the dough for about 5-7 minutes until smooth. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Roll Out the Dough
After resting, divide the dough into smaller portions. Roll each portion out to about 1/8-inch thickness using a pasta machine or rolling pin.

Cut and Shape the Shells
Cut the rolled dough into circles of about 4 inches in diameter. Wrap each circle around a cannoli tube, sealing the edges with a bit of water.

Fry the Shells
Heat the oil in a deep pan over medium heat. Fry the cannoli shells until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
