Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

In a large skillet over medium heat, add the guanciale. Cook until it becomes crispy, about 5-7 minutes. Remove excess fat if necessary, but leave some in the pan for flavor.

Add minced garlic and crushed red pepper flakes to the skillet with guanciale. Sauté for 1-2 minutes until fragrant.

Pour in the tomato purée, stir well, and let it simmer for about 10 minutes. Add salt and black pepper to taste.

Add the cooked pasta to the sauce, tossing to coat. If needed, add reserved pasta water gradually to achieve desired consistency.
