Make the Crispy Wontons
In a deep skillet or fryer, heat vegetable oil over medium heat. Cut wonton wrappers into triangles and fry them in batches until golden brown and crispy. Remove and drain on paper towels.

Cook the Shrimp and Vegetables
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Add the diced bell pepper and sliced leek, cooking for an additional 2-3 minutes until tender.

Prepare the Red Curry Sauce
In a saucepan, combine coconut milk, red curry paste, and salt. Heat over medium heat until the sauce is warm and well combined.

Assemble the Nachos
On a large plate or platter, layer the crispy wontons. Top with the shrimp and vegetable mixture. Drizzle the red curry sauce over the top and garnish with chopped Thai basil.
