    Prepare Eggplant

    Preheat the oven to 400°F (200°C). Prick the eggplant with a fork and roast it on a baking sheet for about 30-40 minutes, until the skin is charred and the flesh is soft.

    Blend Ingredients

    Once the eggplant is cool enough to handle, scoop out the flesh and place it in a food processor. Add tahini, garlic, lemon juice, olive oil, salt, cumin, and parsley. Blend until smooth and creamy.

Roasted Garlic Hummus

    Prepare Roasted Garlic

    Slice the top off the head of garlic, drizzle with olive oil, and wrap in foil. Roast in the oven at 400°F (200°C) for about 30 minutes until soft.

    Blend Hummus Ingredients

    In a food processor, combine the chickpeas, roasted garlic, tahini, lemon juice, olive oil, cumin, salt, and water. Blend until smooth. Adjust consistency with more water if needed.

Pickled Vegetables

    Prepare Vegetables

    Slice the carrots, cucumber, and radishes into thin strips.

    Make Pickling Brine

    In a saucepan, combine vinegar, water, sugar, salt, and peppercorns. Bring to a boil and stir until sugar and salt dissolve.

    Pickle the Vegetables

    Place the sliced vegetables in a jar and pour the hot brine over them. Let them cool, then refrigerate for at least 1 hour before serving.

Crispy Pita

    Prepare Pita

    Preheat the oven to 350°F (175°C). Cut the pita bread into triangles.

    Bake

    Brush the pita triangles with olive oil and sprinkle with salt. Bake for about 10-12 minutes until crispy.
