Prepare Potatoes
Peel and chop the Yukon Gold potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

Mash and Mix
In a large bowl, mash the boiled potatoes until smooth. Add the shredded aged cheddar, salt, black pepper, garlic powder, and onion powder. Mix until well combined.

Form Croquettes
Shape the potato mixture into small balls or patties, about 1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Bread the Croquettes
Roll each potato ball first in flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Return the breaded croquettes to the baking sheet.

Fry the Croquettes
In a deep skillet, heat vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serve hot with house-made ranch dressing on the side for dipping.
