Preparation Steps
Roast the Eggplant
Preheat your oven to 400°F (200°C). Prick the eggplant with a fork in several places and place it on a baking sheet. Roast for about 30-40 minutes, turning occasionally, until the skin is charred and the flesh is soft.
Cool and Scoop
Once the eggplant is roasted, remove it from the oven and let it cool for about 10 minutes. Once cool, scoop out the flesh into a bowl, discarding the skin.
Adjust Seasoning
Taste the Baba Ganoush and adjust the seasoning if needed, adding more salt, lemon juice, or tahini to your preference.
Serve
Transfer the Baba Ganoush to a serving bowl, drizzle with additional olive oil, and sprinkle with chopped parsley. Serve with pita bread or fresh vegetables.
