    Prepare the Fish

    In a shallow dish, mix the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk.

    Coat the Fish

    Dip each walleye fillet into the egg mixture, allowing excess to drip off, then coat with the flour mixture. Ensure they are evenly coated.

    Fry the Fish

    In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, add the fillets in batches, frying for about 4-5 minutes on each side until golden brown and flaky. Remove and place on paper towels to drain excess oil.

    Make House Potato Chips

    Slice the potatoes thinly using a mandoline. Rinse the slices in cold water and pat them dry. In the same pan, add more oil if needed, and fry the potato slices until golden and crisp, about 2-3 minutes per side. Drain on paper towels and season with salt.

    Char the Lemon

    Cut the lemon in half and char it on a hot grill or skillet until grill marks appear, about 2-3 minutes. Set aside.

    Plate the fried walleye with a side of house potato chips, the charred lemon halves, and a serving of tartar sauce for dipping.
