Cook the Chicken
In a skillet over medium heat, cook the chicken breasts for 6-7 minutes per side or until fully cooked. Remove from pan and let rest before slicing.

Prepare the Vegetables
While the chicken is cooking, rinse and dry the mixed greens. Slice the red pepper into thin strips and set aside. Blanch the snow peas in boiling water for 1-2 minutes, then transfer to an ice bath to stop cooking.

Assemble the Salad
In a large bowl, combine the mixed greens, sliced chicken, snow peas, and red pepper. Toss gently to combine.

Add Toppings
Top the salad with dry roasted peanuts and crispy rice noodles.

Drizzle with Vinaigrette
Drizzle the cilantro-peanut vinaigrette and Thai peanut drizzle over the salad before serving.
