Prepare the Crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat together cream cheese and granulated sugar until smooth and creamy. Add in the sour cream, vanilla extract, and eggs one at a time, mixing thoroughly after each addition. Be careful not to overmix.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Chill and Serve
After the cheesecake has cooled, refrigerate for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan and serve plain or with your favorite toppings.
