Prepare the Ingredients
Wash and chop the zucchini and bell pepper into bite-sized pieces. Halve the cherry tomatoes.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add the Zucchini and Bell Pepper
Add the chopped zucchini and bell pepper to the skillet. Sauté for about 5-7 minutes or until they start to soften.

Incorporate Cherry Tomatoes
Add the cherry tomatoes to the skillet and continue to sauté for another 3-4 minutes until they are heated through and slightly blistered.

Season the Vegetables
Sprinkle 1 teaspoon of salt and add black pepper to taste. Stir to combine all the ingredients well.

Serve the Vegetables
Serve the sautéed vegetables over cooked rice or pasta. Drizzle additional olive oil if desired.
