    Prepare the Potatoes

    Peel the potatoes and slice them thinly (about 1/8 inch thick). Place them in a bowl of cold water to prevent browning.

    Prepare the Vegetables

    Slice the onion and bell pepper into thin strips.

Cooking

    Cook the Potatoes

    Heat the olive oil in a large skillet over medium heat. Drain the potatoes and add them to the skillet. Cook, occasionally stirring, for about 10-12 minutes until they are tender but not browned.

    Add Vegetables

    Add the sliced onions and bell peppers to the skillet and continue cooking for another 5-7 minutes until the vegetables are soft.

    Combine Eggs with Vegetables

    In a separate bowl, beat the eggs and season with salt and black pepper. Once the vegetables are cooked, drain excess oil from the skillet and add the egg mixture over the vegetables.

    Cook the Tortilla

    Reduce the heat to low and cook for about 5-7 minutes, or until the edges are set. Carefully flip the tortilla using a large plate and cook the other side for another 5 minutes until fully set.

    Serve the Tortilla

    Once cooked, remove the tortilla from the skillet and let it cool for a few minutes. Slice into wedges and serve warm or at room temperature.
