Cooking Instructions

  1. 1

    Cook the Pasta

Fill a large pot with water, add a pinch of salt, and bring to a boil. Once boiling, add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

  2. 2

    Sauté the Shrimp

In a large skillet over medium heat, add the olive oil and 2 tablespoons of butter. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

  3. 3

    Add the Shrimp

Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and black pepper to taste. Cook for about 2-3 minutes on each side, or until the shrimp is pink and cooked through. Remove the shrimp from the skillet and set aside.

  4. 4

    Make the Sauce

In the same skillet, pour in the white wine and let it simmer for 2-3 minutes to reduce slightly. Stir in the lemon juice and remaining butter, allowing it to melt and combine.

  5. 5

    Combine Pasta and Shrimp

Return the cooked shrimp to the skillet, followed by the drained pasta. Toss everything together, adding reserved pasta water a little at a time to achieve the desired sauce consistency. Stir in the chopped parsley and adjust seasoning if necessary.

  6. 6

    Serve

Divide the shrimp scampi among serving plates. Garnish with additional parsley if desired and serve immediately.
