    Prepare the Base

    In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent.

    Add Aromatics

    Stir in the minced garlic and red bell pepper, cooking for an additional 2-3 minutes until fragrant.

    Incorporate Saffron and Rice

    Add the saffron threads to the pan, allowing them to infuse their flavor into the oil for about 1 minute. Then, stir in the rice, coating it well with the oil and vegetables.

    Pour in Stock

    Slowly pour in the fish stock or seafood broth, ensuring the rice is evenly distributed. Season with salt and black pepper to taste.

    Add Seafood

    Bring the mixture to a boil, then reduce the heat to a simmer. Add the shrimp, mussels, clams, and calamari, arranging them evenly on top of the rice.

    Simmer and Cook

    Cover the pan with a lid or aluminum foil and cook for about 15-20 minutes, or until the rice is tender and the seafood is cooked through. Avoid stirring during this time.

    Add Peas

    In the last 5 minutes of cooking, scatter the peas over the top of the paella to heat through.

    Once cooked, remove the pan from heat and let it rest for 5 minutes. Serve with lemon wedges and sprinkle with fresh parsley before enjoying.
