    Prepare the Mussels

    Rinse the fresh mussels under cold water to remove any sand or debris. Discard any mussels that are open or damaged.

    Sauté Garlic

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

    Add Mussels and Wine

    Add the cleaned mussels to the pot along with the white wine. Stir gently to combine.

    Cook the Mussels

    Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until they have all opened up. Discard any mussels that remain closed.

    Add Herbs and Season

    Once the mussels are cooked, stir in the chopped parsley, cilantro, and green chili. Season with salt and black pepper to taste.
