Ingredients for Paella

Method

Directions for Mariscada

  1. 1

    Prepare the Seafood

Rinse the shrimp, mussels, clams, squid, and fish fillets under cold water and set aside.

  2. 2

    Make the Broth

In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Pour in the white wine and reduce for 2 minutes.

  3. 3

    Cook the Seafood

Add the fish stock, salt, and pepper to the pot. Bring to a simmer, then add shrimp, mussels, clams, squid, and fish fillets. Cook for about 5-7 minutes until seafood is cooked through.

  4. 4

    Garnish and Serve

Stir in fresh parsley just before serving. Serve hot in bowls.

Directions for Paella

  1. 5

    Sauté the Ingredients

In a large paella pan, heat olive oil over medium-high heat. Add diced chicken thighs and chorizo. Cook until browned, about 5-7 minutes.

  2. 6

    Add Vegetables

Add the diced bell pepper and minced garlic to the pan. Sauté for another 3 minutes.

  3. 7

    Add Rice and Stock

Stir in the bomba rice and saffron threads, making sure the rice is well coated with oil. Pour in the chicken stock and season with salt and pepper.

  4. 8

    Cook the Paella

Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes until the rice is cooked and the liquid is absorbed.

  5. 9

    Add Peas and Serve

Sprinkle green peas on top and let sit for 5 minutes before serving. Serve warm.
