    Prepare the Plantains

    Peel the green plantains and slice them thinly, about 1/8 inch thick, using a sharp knife or a mandoline slicer.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium heat until it reaches about 350°F (175°C).

    Fry the Chips

    Carefully add the sliced plantains to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden and crispy, about 3-5 minutes per batch.

    Drain and Season

    Using a slotted spoon, remove the fried plantain chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, and garlic powder to taste.
