    Braise the Beef

    In a large pot, heat the olive oil over medium-high heat. Season the Angus beef with salt and black pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove from the pot and set aside.

    Cook the Onions and Peppers

    In the same pot, add the sliced onions and bell peppers. Cook until the onions are caramelized and the peppers are tender, about 10-12 minutes.

    Combine and Simmer

    Return the seared beef to the pot. Add the beef broth and bring to a boil. Reduce heat to low, cover, and let simmer for 2-3 hours, or until the beef is tender and can be shredded easily.

    Prepare the Harissa Aioli

    In a small bowl, mix the harissa paste with some mayonnaise (about 1/2 cup) to create the harissa aioli. Adjust seasoning with salt and pepper to taste.

    Assemble the Melt

    Once the beef is cooked, shred it with two forks. Toast the sourdough slices on a skillet or griddle. Layer the shredded beef, caramelized onions, sliced rajas, goat cheese, and cheddar cheese on the toasted sourdough. Top with a generous dollop of harissa aioli.

    Melt the Cheese

    Place the assembled sandwiches under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Cut the sandwiches in half and serve immediately, garnished with extra harissa aioli if desired.
