Make the Dough
In a large bowl, combine flour and salt. Add vegetable oil and mix until crumbly. Gradually add water, mixing until a dough forms. Knead for a few minutes until smooth. Cover and let rest for 30 minutes.

Prepare the Filling
In a skillet, sauté your choice of vegetables until tender. Season with salt and pepper. If using vegan cheese, mix it in once the vegetables are cooked. Remove from heat and let cool.

Assemble the Empanadas
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8-inch thick. Cut into circles (about 4-5 inches in diameter). Place a spoonful of the filling in the center of each circle. Fold over and seal the edges with a fork or your fingers.

Bake the Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with egg wash (or plant-based alternative). Bake for 20-25 minutes or until golden brown.
