Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Remove from the grill and set aside.

Cooking the Vegetables

  1. 4

    Prepare the Vegetables

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell peppers, carrots, and asparagus. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp. Season with salt and pepper to taste.

Cooking the Rice

  1. 5

    Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of basmati rice and salt. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork before serving.
