Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out the excess.

  2. 2

    Melt the Chocolate and Butter

In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Melt over low heat, stirring constantly until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix the Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until combined and slightly thickened. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, stirring until well combined. Gently fold in the all-purpose flour and a pinch of salt until just incorporated.

  5. 5

    Fill the Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 6

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is soft.

  2. 7

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

Serving

  1. 8

    Serve the Lava Cakes

Carefully run a knife around the edges of each ramekin, then invert the cakes onto individual plates. Dust with powdered sugar and serve with vanilla ice cream.
