Method
Preparing the Marinara Sauce
- 1
- 2
Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Bring the sauce to a simmer.
- 3
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20-30 minutes, stirring occasionally. Adjust seasoning to taste.
Preparing the Calamari
- 4
Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.
- 5
Make the Breading Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
- 6
Soak in Buttermilk
Place the calamari rings in a separate bowl and pour the buttermilk over them. Let them soak for about 15 minutes.
- 7
Coat the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off, then dredge them in the flour mixture, making sure they are well coated.
- 8
Heat the Oil
In a deep pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 9
Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pot. Fry for 2-3 minutes until golden brown.
- 10
Drain and Serve
Remove the fried calamari and place them on a paper towel-lined plate to drain excess oil. Serve hot with the marinara sauce on the side.
