Method
Preparing the Cauliflower

Preheat the Oven
Preheat your oven to 450°F (232°C). Line a large baking sheet with parchment paper.

Prepare the Cauliflower
Remove the leaves from the cauliflower head and cut it into bite-sized florets.

Season the Cauliflower
In a large bowl, combine the olive oil, garlic powder, onion powder, salt, and black pepper. Add the cauliflower florets to the bowl and toss until they are evenly coated.

Bake the Cauliflower
Spread the coated cauliflower florets in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.

Add Buffalo Sauce
Remove the cauliflower from the oven and drizzle the buffalo sauce over the florets. Toss gently to coat them evenly, then return to the oven for an additional 5-10 minutes.
Making the Blue Cheese Dressing

Combine Ingredients
In a medium bowl, combine the mayonnaise, sour cream, crumbled blue cheese, lemon juice, garlic powder, salt, and black pepper.

Mix Well
Stir all the ingredients together until smooth and well combined. Adjust seasoning to taste.

Chill the Dressing
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Serving

Once the cauliflower is done baking, remove it from the oven and serve hot with the chilled blue cheese dressing on the side for dipping.
