Tortilla Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly combined.

    Add Lard or Shortening

    Add the lard or vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to work it into the flour mixture until it resembles coarse crumbs.

    Add Warm Water

    Gradually add the warm water to the mixture, stirring with a fork or your hands until a dough forms.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 5 minutes, until smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.

    Divide the Dough

    After resting, divide the dough into 8 equal pieces and shape each piece into a ball.

    Roll Out Tortillas

    On a lightly floured surface, roll out each ball into a thin circle, about 8 inches in diameter.

    Cook Tortillas

    Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side, until lightly browned and cooked through. Keep warm in a towel as you cook the remaining tortillas.

    Serve the warm tortillas with a variety of toppings: shredded cheese, black bean corn salsa, pico de gallo, fresh cilantro, sour cream, guacamole, and fire roasted salsa. Allow guests to customize their own tortillas.
