Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and mushrooms, and sauté for about 5-7 minutes until softened. Add the sliced hot or sweet peppers and cook for an additional 3-4 minutes until all vegetables are tender.

Melt the Cheese
Once the Impossible meat is cooked, mix it together with the sautéed vegetables. Place the 8 slices of white American cheese over the mixture in the skillet, cover with a lid, and let it melt for about 2-3 minutes.

Assemble the Sandwiches
Slice the sub rolls in half and scoop out a little of the bread from the inside to make room for the filling. Spoon the cheesy Impossible meat and vegetable mixture into each sub roll.
