Prepare the Onions
In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden brown, about 8-10 minutes. Stir occasionally to ensure even cooking. Once cooked, remove from heat and set aside.

Assemble the Sandwich
Take each Italian hoagie roll and slice it open lengthwise. Layer the bottom half of each roll with salami, capicola, mortadella, and provolone cheese. Top with the sautéed onions, shredded lettuce, and tomato slices. Season with salt and black pepper to taste.

Grill the Sandwich
Preheat a grill or grill pan over medium heat. Brush the outside of each sandwich with the remaining tablespoon of olive oil. Place the sandwiches on the grill and cook for about 4-5 minutes per side, or until the bread is toasted and the cheese is melted. Press down gently with a spatula for even grilling.
