For the Steak Marinade

Method

Marinating the Steak

  1. 1

    Prepare the Marinade

In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt, and black pepper. Whisk until well blended.

  2. 2

    Marinate the Steak

Place the sirloin or flank steak in a shallow dish or resealable plastic bag. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Fajita Filling

  1. 3

    Prepare the Vegetables

While the steak is marinating, wash and slice the bell peppers and onion into thin strips.

  2. 4

    Cook the Steak

Heat a grill or skillet over medium-high heat. Remove the steak from the marinade, letting excess drip off. Cook the steak for 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

  3. 5

    Sauté the Vegetables

In the same skillet (or a separate one), add 1 tablespoon of olive oil and heat over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

Assembling the Fajitas

  1. 6

    Slice the Steak

After the steak has rested, slice it against the grain into thin strips.

  2. 7

    Assemble the Fajitas

Warm the tortillas in a skillet or microwave. Place some sautéed peppers and onions on a tortilla, followed by slices of steak. Top with chopped cilantro, sour cream, and avocado slices.

  3. 8

    Serve

Serve the fajitas warm with additional toppings if desired. Enjoy!
