Turkey Preparation

    Roasting the Turkey

    Preheat your oven to 325°F (163°C). Rub the entire turkey with olive oil and season generously with salt, black pepper, garlic powder, onion powder, and paprika. Place the turkey in a roasting pan, breast side up.

    Roasting Time

    Roast the turkey in the preheated oven for about 13-15 minutes per pound. For a 12-pound turkey, this will take about 3 to 3.5 hours. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C).

    Resting and Pulling

    Once the turkey is done, remove it from the oven and let it rest for at least 30 minutes before pulling the meat apart with forks.

Coleslaw Preparation

    Mixing the Coleslaw

    In a large bowl, combine the shredded cabbage and carrot. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

    Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate for at least 30 minutes to allow flavors to meld.

Assembly

    Assembling the Sandwich

    Slice the sandwich rolls in half. On the bottom half, layer pulled turkey, a slice of provolone cheese, a generous portion of coleslaw, and a drizzle of Russian dressing. Add mayonnaise to taste.

    Top with the other half of the sandwich roll and serve immediately.
