Prepare the Ingredients
Thinly slice the grilled chicken breast and set aside. Slice the mushrooms, onion, and peppers into thin strips.

Cook the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and mushrooms, and sauté for about 5 minutes until they are soft and caramelized.

Prepare Hoagie Rolls
While the chicken mixture is heating, cut the hoagie rolls open lengthwise without cutting all the way through.

Fill the Rolls
Once the chicken and vegetables are heated through, divide the mixture evenly among the hoagie rolls.

Add Provolone Cheese
Place 2 slices of provolone cheese on top of the chicken mixture in each roll.

Melt the Cheese
Optional: Place the filled hoagie rolls under a broiler for 1-2 minutes, just until the cheese is melted and bubbly.
