Marinade

Chicken & Vegetables

Method

Marinade Preparation

  1. 1

    Mix Marinade Ingredients

In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper until well combined.

  2. 2

    Marinate Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours for more flavor.

Grilling Chicken & Vegetables

  1. 3

    Prepare the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and covered with gray ash.

  2. 4

    Prepare Vegetables

While the grill is heating, slice the bell peppers and onion into strips.

  3. 5

    Grill Chicken

Remove the chicken from the marinade and discard any leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

  4. 6

    Grill Vegetables

In the last 5-7 minutes of grilling the chicken, add the sliced bell peppers and onion to the grill. Cook until they are tender and slightly charred.

Serving

  1. 7

    Slice and Serve

Once the chicken is cooked, transfer it to a cutting board and let it rest for a few minutes before slicing it into strips. Warm the tortillas on the grill for about 30 seconds on each side. Serve the sliced chicken, grilled vegetables, and fresh cilantro with the tortillas.
