Preparation of Beef

Season the Beef
Preheat your oven to 225°F (107°C). In a small bowl, mix together the salt, black pepper, garlic powder, and onion powder. Rub this seasoning mixture all over the American Wagyu beef roast, ensuring it is evenly coated.

Slow Roast the Beef
Place the seasoned Wagyu roast on a roasting rack in a baking pan. Insert a meat thermometer into the thickest part of the roast and place it in the preheated oven. Roast until the internal temperature reaches 125°F (52°C) for medium-rare, about 3 to 4 hours. Adjust time as necessary based on the size of the roast.

Rest the Roast
Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes to allow the juices to redistribute.

Prep the Toppings
While the roast is resting, wash and dry the romaine lettuce. Slice the tomato and red onion thinly.

Slice the Roast
After resting, thinly slice the Wagyu roast against the grain to ensure tenderness.

Build the Sandwich
On a large platter or cutting board, layer the sliced Wagyu beef, followed by the provolone cheese, romaine lettuce, tomato slices, and red onion. Spread mayonnaise on the bottom half of your preferred sandwich bread (like a hoagie or ciabatta) before adding the meat and toppings.
