Pancake Preparation

Make the Pancake Batter
In a large bowl, mix together the ulu puree, flour, baking powder, salt, milk, egg, vanilla extract, and sugar until smooth.

Cook the Pancakes
Heat a non-stick skillet over medium heat. Pour 1/4 cup of the batter for each pancake and cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.

Make the Latik
In a saucepan, combine coconut milk, brown sugar, and a pinch of salt. Cook over medium heat, stirring occasionally, until the mixture thickens and becomes syrupy, about 15-20 minutes.
Vanilla Cream Preparation

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble the Dish
Stack the pancakes on a plate, top with sliced bananas, drizzle with latik syrup, and add a dollop of vanilla cream.
