Prepare the Biscuits

    Make the Biscuit Dough

    Preheat the oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

    Bake the Biscuits

    Turn the dough out onto a floured surface and gently knead it a few times. Pat into a 1-inch thick round. Cut out biscuits using a biscuit cutter and place on a baking sheet. Bake for 10-12 minutes until golden brown.

Prepare the Hollandaise

    Make the Hollandaise Sauce

    In a double boiler, whisk together the egg yolks and lemon juice until thickened. Slowly drizzle in the melted butter while whisking continuously until the sauce is thick and creamy. Stir in Old Bay seasoning and salt to taste.

Assemble the Benedict

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove from the skillet and drain on paper towels.

    Sauté the Greens and Corn

    In the same skillet, add tatsoi and corn, cooking until just wilted and heated through.

    Assemble

    Split the biscuits in half. Layer the bottom half with bacon, sautéed tatsoi and corn, and lobster meat. Top with hollandaise sauce and cherry tomatoes. Serve immediately.
