Method

Cooking the Pork Adobo

    Marinate the Pork

    In a bowl, combine diced pork belly, soy sauce, vinegar, minced garlic, black peppercorns, and bay leaves. Marinate for at least 30 minutes, or preferably overnight in the refrigerator.

    Cook the Pork

    In a large pot, add the marinated pork along with the marinade. Bring to a boil, then reduce heat to a simmer. Cook for 45 minutes to 1 hour until the pork is tender and the sauce is thickened. Remove from heat and let it cool slightly before shredding or chopping the pork into smaller pieces.

Fried Rice

    Prepare the Fried Rice

    In a large skillet or wok, heat some oil over medium-high heat. Add the cooked white rice and stir-fry for about 5 minutes until heated through. Add the cooked pork adobo and stir to combine, cooking for an additional 3-5 minutes.

Assembly

    Plate the Dish

    Scoop the fried rice onto plates. Top with sliced avocado, pickled mushrooms, sautéed sesame kale, and kimchee. Fry the eggs over easy and place on top of the rice. Serve immediately.
